Houston chefs Dominick Lee and EJ Miller are banding together for an exclusive one-night-only Mardi Gras meal on Feb. 6. Here’s what you need to know.

Chefs Dominick Lee and EJ Miller have joined culinary forces to plan an exclusive Mardi Gras-themed dinner on Friday, February 6. The Laissez Les Bons Temps Rouler—a one-night-only event—will take place at Houston’s Chardon restaurant, located at 1711 Allen Pkwy Suite 101. Miller is the executive chef at Chardon, and Lee is set to open Augustine’s, a Creole restaurant located in the Hotel King David, this summer.

In a statement announcing the unique occasion, Miller wrote, “This dinner is about celebrating shared roots, creative freedom, and the joy of the season. Chef Dom brings an exciting, modern Creole perspective that pairs beautifully with our Texas French approach. It’s festive, indulgent, and meant to be enjoyed together.” Lee added his perspective as well, stating, “Creole and French cooking are inherently entwined. They come from the same place but tell different stories. Chef EJ and I share a respect for tradition and a love for pushing these narratives forward, and this dinner is a chance to bring those two conversations to the same table.”

The choice-driven, three-course prix-fixe menu features mouthwatering appetizers, mains, and desserts. Let’s go over all the details so you can make your reservation while spots are still open.

Menu, prices, and available time slots

To kick off the Laissez Les Bons Temps Rouler dinner, you’ll be served a po’ boy roll with duck fat butter and poached shrimp with a Vietnamese green chili dipping sauce (Muối Ớt Xanh). First course options include a hog head cheese pâté en croûte, escargot Rockefeller with creamed spinach and Herbsaint, and Creole bucatini. Up next are the entrees, which “lean deeply into Mardi Gras spirit,” according to Chardon’s website. Choices include:

  • Chicken-fried rabbit with potato salad and persillade (a bone-in New York strip is offered as an alternative)
  • Gumbo Americana with duck breast
  • Suckling pig porchetta “muffuletta”

No fine-dining experience is complete without dessert, and chefs Dominick Lee and EJ Miller have you covered there, too. Diners can choose from sweet potato and black lime Mont Blanc, King Cake Profiteroles, and Zydeco Crunch. Warmed traditional beignet lagniappe will be served in a bag for you to take with you when you leave.

This decadent, limited dinner costs $95 per person.
